Cool Kefir Dressing (No Oil)
2 cups fresh Kefir
1 heaping tbs. fresh parsley, chopped
1 heaping tbs. fresh chives, minced
1 heaping tbs. fresh lemon zest, finely chopped
1 heaping tbs. fresh garlic, finely chopped
1 tsp. sea salt
1/4 tsp. Herbamare TM
1/2 tsp. xanthan gum
1. Combine all ingredients (except xanthan gum) and blend thoroughly.
2. Slowly add xanthan gum and continue to blend until mixture thickens.
3. Full flavor will develop after 6 to 8 hours.
Note: Dairy products combine best with nonstarchy vegetables and acid fruits. Don't hesitate to add a little Flax Seed Oil to this recipe.

SMOOTH KEFIR CHEVERON CHEESE

Uncooked method, Ladle clear whey liquid carefully out from the kefir curds. The grains are not needed here for cheese production. Place two layers of cheesecloth in a colander or strainer and pour remaining curds onto it. Tie or seal it shut and allow the remaining whey to drain. Occasionally knead it to further dry the solids and distribute them into a smooth consistency. Time, patience and attention will teach you how to create wonderful cheese.
The cooked method,if you must. This process will yield a harder and drier cheese than the former one. Heat the cultured milk until tiny bubbles form on the surface. This is well below its boiling temperature. Realize, if you cook it, it becomes pasteurized again, therefore killing all the beneficial yeast and bacteria which you so lovingly cultured to life. It will have the flavor but not the healing properties of Kefir.

40-karat Chilled Latte

Here is a creative way to eat your vegetables! You can juice your own, or purchase fresh or frozen carrot juice for the recipe.

1/4 cup Fresh Carrot Juice

3/4 cup Helios Organic Vanilla Kefir

Grape Escape
Did you know that Concord grape juice has been shown to help lower systolic blood pressure in men with high blood pressure? Low-fat dairy products, too, are recommended for people with high blood pressure. While we haven't tested this recipe on anyone's blood pressure, it's got some “grape” ingredients!

If you prefer a drink that's sweeter and more like a milkshake:

1 Tbsp frozen 100% Grape Juice Concentrate
1 cup Helios Organic Vanilla Kefir

 OR 

If you prefer a drink that's a little bit tart and has a thinner consistency:

1/4 cup 100% Grape Juice (not the concentrate, but the juice)
3/4 cup Helios Organic Plain Kefir
Using the recipe you prefer, stir the two ingredients together or place together in a shake-cup and shake. Enjoy as is, or over ice.

Sweet Cream
If you aren't familiar with Organic Sucanat, you're in for a treat. Organic Sucanat is organic sugar cane that is harvested and squeezed of juice. The juice is filtered and evaporated to remove excess water, then crystallized. The result is a natural sugar crystal that has a gentle molasses flavor and maintains vitamins and minerals of the original plant.

1 cup Helios Organic Plain Kefir

2 tsp Wholesome Sweeteners' Organic Sucanat
Stir together, let stand for 5 minutes, and stir again (time can vary depending on whether you enjoy the burst of flavor from sucanat specks or prefer that they dissolve completely before drinking. Enjoy as is!

Mildly Maple
When we lived in New England, nothing was as heart-warming as the taste of maple syrup! Easy to mix and imparting a lovely maple flavor – this is a great way to sweeten Plain kefir!

1 cup Helios Organic Plain Kefir

1 Tbsp Pure Maple syrup

Pumpkin Pie Smoothie

Another great way to enjoy your vegetables, pumpkin is rich in Vitamin A! Kids and adults love this one!

1 cup Helios Organic Vanilla Kefir

2 TBSP Organic pureed pumpkin

Pinch of cinnamon and nutmeg

Blend ingredients together and enjoy as is or with a dash of cinnamon-sugar sprinked on top.

Cranberry Tazz Smoothie
Antioxidants abound in this tangy smoothie! Refreshing, invigorating and darned healthy too!

1 cup frozen cranberries

1/2 cup frozen blueberries

Juice of one small lemon

1 cup cranberry juice

1 1/2 cups Helios Organic Raspberry Kefir

1/2 cup Helios Organic Vanilla Kefir
Blend the frozen fruit and juices together until fruit is pureed smooth. Add Helios Raspberry and Vanilla kefirs, blending enough to stir in completely. Serve as is and enjoy. Serves 4.

Blue Berry Pancakes!

If you enjoy pancakes you'll love this recipe. It was in the latest
edition of Cook's. They use milk soured with lemon instead of kefir but
everything else is as they recommended. (They do a lot of taste
testing.)

2 Cups kefir
2 C. unbleached flour
2 T. sugar
2 t.. baking powder
1/2 t. baking soda
1/2 t. sea salt - or salt
1 large egg
3 T. butter, melted and cooled slightly
1 cup blueberries rinsed and dried

Whisk flour, sugar, salt, baking powder and soda in medium sized bowl.
Whisk in egg and butter. Make a well in the center and gently whisk in
kefir. Combine but leave thick and slightly lumpish. Pour a heaping
tablespoon of batter into an oiled, non-stick skillet. Sprinkle
blueberries on top. Turn, add small dollops of butter, remove when
